Ingredients and spices that need to be Take to make Karanji:

  1. 1./2 cup maida
  2. 1 pinch salt
  3. 2 tbsp oil (for moein)
  4. as needed Water for kneeding the dough
  5. 1 tbsp chironji
  6. 1/2 cup grated khobra (grated dried coconut)
  7. as per taste Powdered/castor sugar
  8. 1 tbsp khus-khus/poppy seeds
  9. as required Oil for deep-frying

Steps to make to make Karanji

  1. Firstly take a large bowl add maida in it then add a pinch of salt, mix it well then add 2 tbsp of oil in it. Mix it well so that it starts forming lump if you hold it tight in your fist. (Refer to the below image). Then slowly and gradually add water and make a soft dough. (Just like chapati dough). Now cover the dough and let it rest for about half an hour to set.
  2. Now let's come to the filling part. Heat a pan add grated khobra and dry-roast it for about a min then add chironjis and poppy seeds in it and roast everything well until the grated khobra turns slightly golden/yellowish in colour.
  3. Now switch off the flame and add powdered sugar to it as per your taste. Mix it well with the mixture. Your filling is now ready.
  4. Now let's come to the dough. Once again Knead the dough for about a min. Then start making balls as we make in puris. (Refer to the image below) It will make around 10 to 12 balls with it.
  5. Now take a ball and roll it like puri, then place a tbsp of filling in the center, gently spread it a little then fold it like "D", as shown below. Gently press the edges with the help of a fork or even your can press it with your finger tip. Repeat the same process with the rest of the balls.
  6. Now heat a kadai, add some oil it it for deep-frying. Once the oil gets medium hot, one by one, gently drop down the karanjis into the oil. Donot over crowd them into the oil. Once it starts bubbling over the karanjis, gently flip on the sides.
  7. Keep the flame between medium to high. Wait till the karanjis turns golden on one side then flip on the sides and wait till they turns golden from both the sides. It will take around 5 to 7 mins to fry them perfectly. Then gently remove them over a tissue paper. Repeat the same with the rest of the batches.
  8. Let them cool down completely then store them in a clean, air-tight container. It stays fresh for about a month.
