- 1 kg chicken
- 2 tbsp ginger garlic paste
- 1 medium size onion finely chopped
- 2 medium size onion paste
- 1/2 tbsp green chilli paste
- 1/2 cup yoghurt
- 1/2 cup fresh cream
- 1/2 tsp Chili flakes
- 1/2 cup almond
- 1 tbsp kasuri methi
- as needed Oil
- For special masala powder:-
- 2 tsp coriander seeds
- 1 tbsp cumin seeds
- 1/2 tsp fennel seeds
- 1 black cardamom
- 2 cinnamon stick
- 1 bay leaf
- 5-6 cloves
- 1 star anise
- 1 mace
- 1 nutmeg
Steps to make to make Almond Malai Murgh Curry
- Soak the almonds in hot water for 15 minutes. Peel the the almonds and put them in a blender with fresh cream and make a smooth thick paste. Keep it aside.
- Take a pan add all whole spices. On medium flame dry roast the spices until they turn aromatic. Switch off the flame. Let the spices cool down. Then put them in a grinder and grind it into a fine powder.
- Take a mixing bowl add yoghurt, 1 tbsp ginger garlic paste, chili flakes and 1 tbsp whole spices powder. Mix it well. Now marinate the chicken with this mixture and keep it aside for 1 hrs.
- Heat a pan with oil. Add chopped onion, onion paste, green chilli paste, 1 tbsp ginger garlic paste and saute for 3-4 minutes. When the paste release the oil add marinated chicken pieces and cook them for 5-6 minutes. Cover it with lid and cook the chicken for 5 minutes.
- Add salt and sugar and stir it. Then add almond malai paste. Mix it well and cover it with lid. Let the Chicken cook for 4-5 minutes on medium flame.
- Switch off the flame and serve it hot with garlic naan or paratha.
