- Mashed boiled potatoes 3 medium
- 1 cup Grated paneer
- 1/2 cup Mashed boiled peas
- Grated carrot 1 medium
- 1/2 cup Finely chopped capsicum
- 1/4 cup Finely chopped cabbage
- 1/4 cup Finely chopped beans
- Chopped onion 1 medium
- 1 Chopped tomato
- 1 tablespoon Ginger garlic paste
- 1 tsp Cumin seeds
- 1/2 tsp Hing
- 1 tablespoon Coriander powder
- 1/2 tablespoon Red chilli powder
- 1 tsp Aamchur powder
- 1 tsp Garam masala
- 1 tsp Kitchen king masala
- 1 tablespoon Lemon juice
- 2 tablespoons butter
- 2 tablespoons cooking oil and some more to shallow fry
- Chopped coriander leaves 1 tablespoon
- To serve
- Grated cheese
- Green chutney
- Tamarind and dates chutney
- Tomato ketchup
- 1/4 cup Veg. Mayonnaise sauce
- Large half cooked wheat rotis or tortillas 6
- 1 tablespoon Cooking oil
- Water to sprinkle
Steps to make to make Veg Meyo Kathi Roll
- First, heat up oil in a pan and splutter cumin seeds.
- Then add onions, ginger garlic paste and saute well. Then add one by one all the vegetables and saute well.
- Add salt, spices and cook on medium flame till veggies are cooked and slightly crunchy. Stir in mashes potatoes, paneer, and cook well.
- Now adjust seasoning, add chopped coriander leaves, lemon juice and mix well. Cool this mixture.
- Make small croquettes and roll in fine sooji. Shallow fry on oil in a pan and drain on kitchen paper.(Alternatively you can just use the mixture within frying as a healthy option as I did.)
- Now to assemble the Kathi Roll: heat a skillet or tawa. Add oil. Place the half cooked roti with cooked side up. Spread your choice of chutney on top. Then spread Mayonnaise sauce on top.
- Place the vegetable roll and sprinkle chopped onion, cabbage, cheese and roll up tightly.
- Then tawa roast both the sides till crisp. Then roll in a butter paper wrap. Serve immediately with green chutney, ketchup and enjoy!
