Ingredients and spices that need to be Make ready to make Toor Dal Masala Vada:

  1. 1 cup Toor Dal
  2. 1 Small Onion (Finely Chopped)
  3. 4 Green Chillies
  4. 1 Inch Ginger
  5. 1/3 cup Freshly Grated Coconut
  6. 3 tbsp Coriander Leaves (Finely Chopped)
  7. 1 Sprig Curry Leaves (Finely Chopped)
  8. to Taste Salt
  9. 2 tbsp Rice Flour (Only if required)
  10. as required Oil (For Deep Frying)
  11. For Coriander Coconut Chutney:
  12. 1/2 cup Freshly Grated Coconut
  13. 3 tbsp Roasted Chana Dal
  14. 5 Green Chillies
  15. 1 Inch Ginger
  16. as required Small Bunch of Coriander Leaves
  17. as required Juice of Half Lemon
  18. to Taste Salt
  19. 1/4 cup Water
  20. For Tempering the Chutney:
  21. 2 tsp Oil
  22. 1/2 tsp Mustard Seeds
  23. 1 tbsp Chana Dal
  24. 1/4 tsp Cumin Seeds
  25. to Taste Asafoetida (Pinch)
  26. 1 Sprig Curry Leaves

Instructions to make to make Toor Dal Masala Vada

  1. Wash the toor dal few times. Soak the dal in water for 2 to 3 hours.
  2. After 3 hours, Using a colander, drain out the water from the dal and let it rest in the colander for few minutes until it drains off completely. Set aside 1/4 cup of the soaked dal.
  3. Transfer the remaining dal to a mixer. To it add ginger and green chillies and pulse few times to get a coarse mixture. Do not add water while grinding the dal. Take a small portion of the mixture and form it into a ball. If it gets formed then the texture is perfect. If not, pulse for few more times.
  4. Transfer the ground mixture into a large bowl. Add the soaked toor dal which was set aside.
  5. Add the chopped onions, curry leaves, coriander leaves, salt and freshly grated coconut and mix until well combined.
  6. If the mixture is wet, add little rice flour to get the right consistency.
  7. Take a small portion of the mixture and form into a ball and flatten it slightly.
  8. Heat oil in a deep frying pan. To check if the temperature of the oil is correct, drop a little dal mixture in the hot oil. It should come up immediately. Keeping the flame to low medium, carefully drop the vadas in the hot oil and fry until golden and crispy. Keep flipping to cook evenly on both sides. Fry few at a time. Do not overcrowd the pan.
  9. Remove the vadas from oil and place them on kitchen towel to drain away the excess oil.
  10. Toor Dal Masala Vada - A crispy and deep fried snack is ready. Serve it immediately either with coriander coconut chutney or tomato sauce alongwith a hot cup of tea or coffee.
  11. For making Coriander Coconut Chutney: In a mixer, add freshly grated coconut, coriander leaves, ginger, green chillies and salt.
  12. Next add lemon juice, roasted chana dal and water. For roasted chana dal, wash and soak chana dal for 15 minutes. Then roast in a tadka pan with few drops of oil.
  13. Now grind the chutney to a smooth paste. Remove in a bowl and set aside. The chutney taste good thick. You can add some water to get the desired consistency.
  14. For tempering of the chutney: In a tadka pan, heat oil. Add mustard seeds and allow it to crackle. Add chana dal and sauté till golden in color. Add cumin seeds, asafoetida and curry leaves. Pour this tadka over the chutney. Mix well and enjoy it with the Toor Dal Masala Vada.
