  1. Firstly start by prepping your lentils by washing and boiling to the instructions, drain and set aside. Place your aubergine on a baking tray with a drizzle of oil, roast at 200deg C for 40 minutes. Once cooled split the skin, shred the flesh with two forks and set aside.
  2. Heat the oil in a wok or high sided pan, drop in the cumin and mustard seeds and fry for a few seconds (be careful the seeds will pop) throw in the onions and slowly cook for 10-15 minutes (add a splash of water to stop them burning)
  3. Once softened, add in the garlic and ginger, fry for a minute til fragrant. Now stir in the spices and cook for 30 seconds before pouring in the coconut cream, veg stock and tomatoes. Season to taste with some sea salt, and simmer for 5 minutes.
  4. Now stir in the lentils and aubergine (add a splash of hot water here if needed) and let gently simmer for a further 5-7 minutes.
  5. Remove from the heat, stir in the cream (or plant based alternative) and chopped coriander. *Top with extra coriander, toasted coconut and sunflower seeds.
  6. Serve straight from the pan at the table with some flatbreads, mango chutney and a sprinkle of chilli flakes if you need a hit of spice.
