  1. Firstly, in a large kadai heat 2 tbsp oil and roast 2 tbsp peanut.
  2. Also, roast 2 tbsp cashew until it turns golden brown and crunchy. keep the fried peanuts and cashews aside.
  3. In the same oil add 1 tsp mustard, 1 tsp urad dal, 1 tsp chana dal, 1 dried red chilli.
  4. Also add 1 onion chopped 2 dried red chilli, 2 cloves chopped, mustard seeds,pinch hing and few curry leaves. splutter the tempering on medium flame.
  5. Add in ¼ tsp turmeric and saute slightly.
  6. Further, add 2 cup cooked rice and ½ tsp salt. mix well making sure everything is well combined.
  7. Also, add 2 tbsp coriander and 2 tbsp lemon juice. mix well. finally, enjoy lemon rice with papad or pack for lunch box.
