- 10-12 curry leaves
- 1 green chilli finely chopped
- 3 green chillies not chopped
- 1 tsp red chilli powder
- 3 tbsp coconut oil
- 1 1/2 cups tamarind water (soaked &squeezed strained)
- 2 tsp jaggery(can adjust the quantity as per your taste)

- Firstly keep a sauce pan on medium flame, add in coconut oil and heat up, add chopped ginger, chilli, curry leaves, need to roast everything until light brown and crisp, take it out in a, bowl..
- Now to the same oil add tamarind water, red chilli powder, asafoetida, and jaggery, add in salt according to taste, keep stirring, until it becomes little thicker, at this point add roasted ginger mixture,keep stirring on low flame until oil starts to ooze out from the edges, turn off the flame..its done..if you give rest to 2-3 days before serving, it increases the taste of the dish..Enjoy this chatpata, Inji puli..
