  1. 1 cup besan/gram flour
  2. 1/4 cup ghee
  3. 1/2 cup grated jaggery
  4. 3 tbsp mawa
  5. 3 tbsp milk
  6. 10-12 saffron strands
  7. 1 tsp cardamom powder
  8. 3-4 tbsp chopped pistachios and almonds
  9. as required Silver leaf or Chandi Vark

Steps to make to make Besan or Gur ki Burfi

  1. Firstly, in a bowl add warm milk and saffron strands. Keep it aside to influence the flame and colour of saffron.
  2. Heat ghee in a heavy bottom kadai. Keep the flame on low. Once the ghee has melted, add besan in parts. Please use a heavy kadai, so that the besan roasts evenly.Mix very well and stir the besan continously.
  3. Initially the ghee will be absorbed by the besan and you will see the mixture getting thicker. Continue to stir and fry the besan for 12-15 minutes or until the besan mixture become aromatic and starts to become molten or ghee will be released from the sides.
  4. Further add grated mawa, mix very well, make sure there is no lumps. Now add saffron-milk.
  5. Stir continuously and cook for another 4-5 minutes on low flame. Turn off flame. But keep stirring for 3-4 minutes. Further, add grated jaggery and combined everything together well.
  6. Once mixture is combinednicely, quickly pour the mixture in the lined box or tray. Place Silver leaf over it and spread chopped almonds, Pistachio and rose petals. When it is little warm, slice the Besan Burfi in squares.
  7. After 30 minutes demould burfi. And this delicious, Mouthmelting and soft Besan or Gur ki Burfi is ready to eat. Store burfi in refrigerator and enjoy up to 10 days
