It was then that Alexander ordered a great banquet for him and this raan was served. Since Alexander is also famously known as Sikandar, hence this dish gets the name. Traditionally it is slow cooked in a large pit, with meat wrapped in a cloth and closing the pit with mud and burning coals so that mud and other dirt particles does not get inside it. It can also be baked in an oven wrapped in Rotis or as it is just like how I did. - 1 Lamb leg or Raan
- 3-4 tbsp Ginger garlic paste
- 2 tbsp Raw Papaya paste
- 2-3 tbsp Red Chilli powder
- 2 tbsp Salt or to taste

- 1 tbsp Cumin powder roasted
- 1 tbsp Fennel powder roasted
- 1/2 tsp Mace powder
- 1 tsp Garam Masala
- 1/2 tsp Green Cardamom powder
- 1/2 cup Hung Curd
- 1 tsp Turmeric powder
- 1 tbsp Dried Fenugreek Leaves or Kasuri Methi
- 1 tbsp Rose water
- 1 tbsp Lemon juice
- 10-12 Rotis uncooked (optional)
- 1/2 cup Oil or Ghee or Butter
Steps to make to make Sikandari Raan
- The first thing to be done is clean the raan and make slits all along.
- It is advisable to do it as it will help in getting a juicy and a succulent raan after grilling. Papaya paste helps in cooking it perfectly. Marinate it for one whole day. It's an important part of this amazing dish.
- Baste it with oil before grilling. Preheat oven to the maximum and wrap the raan in as many rotis as required. This is purely optional. You can straight away roast it as well.
- The rotis also will get cooked simultaneously and will also absorb the excess fats from the raan.
- Bake it for nearly 2 or 3 hours as required. Keep checking after every 40 minutes and baste with little oil or butter each time.
- Serve it hot with salad and buttermilk as it is super spicy.
