- Boil the dal. Strain the water and take 2-3 tablespoon of cooked dal aside for making aamti. Make puran with the dal
- In a pan dry roast onion chillies, garam masalas, coconut, rice and garlic. Once cooled, make a fine paste. Add water if required.
- In a large vessel, heat oil. Add the chilli powder, hing, turmeric and curry leaves Now add the paste and salt and mix properly. Once oil start to float on the masala add the dal and the water (dal water). Add more water if required and let the Aamati boil. Simmer for 5 minutes on low flame and switch off the gas.
- Cover and keep aside for 10-15 minutes. You can see a layer of red oil floating on top of the Aamati. This is the sign of perfect katachi Aamati.
