Ingredients and spices that need to be Prepare to make Bharleli Bhindi (Stuffed Okra):

  1. 500 grams Bhindi
  2. 5-7 Tbsp Oil
  3. 1/2 tsp Mustard seeds
  4. 1 pinch Asafoetida (hing)
  5. For making Stuffed Chutney:-
  6. 1 cup chopped/grated coconut (roasted)
  7. 1 small chopped onion (roasted)
  8. 15-20 sprigs coriander leaves
  9. 1 tsp Coriander (dhania)seeds (roasted)
  10. 1 tsp cumin seeds (roasted)
  11. 2 green chillies chopped
  12. 5-6 garlic
  13. 7-8 curry leaves
  14. 1 tsp chopped ginger
  15. 1 tsp oil
  16. 1/4 tsp Turmeric powder (Haldi)
  17. 1/4 tsp Kashmiri Red Chilli powder
  18. as per taste Salt
  19. 1 tsp Lemon juice

Instructions to make to make Bharleli Bhindi (Stuffed Okra)

  1. Roast cumin seeds, coriander seeds for 3 to 5 mins. Then remove from heat and let it cool. Next roast coconut pieces and chopped onion in a same pan, till slightly brown. Switch off the gas. keep both mixture aside to cool down completely.
  2. Add roasted coconut, onion, cumin seeds and coriander seeds in the mixer jar. Then add coriander leaves, curry leaves, green chillies, ginger, garlic, water as little as possible and grind to make a thick chutney.
  3. Now wash the bhindi, wipe them dry with cloth and cut off head and tail. While making slit in the center, take care not to cut the bhindi in half.
  4. In a vessel, heat 1 tsp of oil. Add 1/4 tsp Haldi, 1/4 tsp red chilli powder. Next add onion-coconut chutney, lemon juice (1 tsp) and salt (as per taste). Cook for 5 minutes on low flame to make chutney slightly dry. Let stuffing mixture cool down completely.
  5. Stuff this stuffing mixture in the Bhindi. Spread leftover chutney over stuffed Bhindi.
  6. Heat a non-stick pan and add the 5 Tbsp oil to it. Add the mustard seeds. When mustard crackle, add the asafoetida. When the oil is hot enough, add stuffed Bhindi in batches.
  7. Shallow fry it on low heat with the lid covered. Do not stir much. After some time turn the Bharleli Bhindi gently to other side. Cover and cook again for few minutes. Cover the pan and pour little water on lid kept on pan, so that the okra will not burnt or overcooked.
  8. Uncover the pan and cook the Bhindi further for few minutes. Add oil if needed. When the bhindi and masala are both cooked properly, turn off the gas. Transfer Bharleli Bhindi to a serving bowl.
  9. Serve Bharleli Bhindi with chapati or as a side dish along with Dal and Rice.
