  1. 2 cups Banana Plantain flowers
  2. 4 Tbsp yoghurt
  3. 1 Tbsp Black mustard seeds
  4. 1 Tbsp white mustard seeds
  5. 1 tsp poppy seed
  6. 1/2 tsp turmeric powder
  7. 1 tsp red chilli powder
  8. 1/2 tsp garam masala powder
  9. 1/2 cup grated coconut
  10. 6-7 Tbsp mustard oil
  11. As per Taste Salt
  12. Leaves as per required Banana
  13. For garnish
  14. as required green chillies
  15. leaves as required coriander
  16. as required grated coconut
  17. as required banana plantain flowers

Instructions to make to make Mocha’r Paturi

  1. Smear your palm with mustard oil and wash the banana plantain flower well, take out the blossoms, discard the pollen and do the same for the entire flower. Wash the pollen again.
  2. In a pressure cooker add the flowers and add 1/2 tsp turmeric powder, a pinch of salt, and boil for 1 whistle on medium flame. Set aside and strain. Cool.
  3. Once cooled mash the flowers and discard any extra water. Mash well. Set aside.
  4. In a blender add Black mustard seed, white mustard seed and poppy seed, grated coconut, and salt, and make a paste adding little water. Set aside.
  5. In a bowl add the paste, add yogurt, add a mashed banana flower, add 1 Tbsp mustard oil and mix well. Set aside.
  6. Take the Banana leaves and cut them into 8”x8” size and heat a Tawa, on low flame place the washed Banana leaves and roast each side. Be careful while roasting so that it doesn’t tear off. Set aside.
  7. On the kitchen top place a banana leaf, place 2 Tbsp banana flower mix, drizzle 1/2 tsp mustard oil, place a green chili in the center, fold the banana leaf into two on the mix, fold again the other half, tie with a thread very well on both sides so that the filling doesn’t come off. Complete the batches.
  8. In the same area heat mustard oil and smear on all sides well, place the Paturi on it, and on low flame cook covered for 7-8 mins one side. After 7-8 mins open the cover, flip the sides gently, and cook covered on low flame for 7-8 mins. Set aside.
  9. Cut the threads, open the banana leaf and plate. Plate with steamed rice.
  10. Enjoy.
