  1. 2 cup basmati rice, washed, soaked in water for 1 hour,
  2. 4 tbsp oil,
  3. 1 med sized onion chopped finely,
  4. 2 garlic cloves, chopped finely or grated,

  14. Mexican Spice Mix.

  17. 1 tsp oregano,
  18. 1 tsp red chilli powder,
  19. 1/2 tsp salt,
  20. (dry roast zeera & dhania seeds for 5 minutes, cool it.)
  21. (grind it to a fine powder along with other given ingredients)
  22. 1 tomato roughly chopped,
  23. आवश्यकतानुसार Some chopped dhania patta (optional),

Instructions to make to make Mexican Rice

  1. Strain rice, keep aside.
  2. Take a deep bottom pan, add good amount of water, 1 tbsp oil & 1 tsp salt, let it boil.
  3. Add rice, cook it until almost cooked. Do not overcook it.
  4. Strain it, put it under water to stop further cooking.
  5. Take out in a bowl, keep it in the fridge. Cook it next day.
  6. Now take a deep bottom pan, add oil, heat it.
  7. Add garlic & onion, saute it for a minute.
  8. Add all the veggies, corn, beans & lil salt, saute it for a minute. (Soak beans in water overnight, pressure cook them till done, strain them).
  9. Now add rice, stir fry it for a minute.
  10. Add tomato puree, mix it well.
  11. In goes 2 tbsp maxican spice mix, stir it gently.
  12. Add tomato, stir fry it for 2 minutes. Also add dhania patta, mix it well.
  13. Turn off the flame, cover it for a minute.
  14. Take out in a serving dish, garnish it with Salsa or crushed Nachos. You can also add grated cheese..
  15. Can be served as it is or with Enchiladas...
