  1. For Bhakri:
  2. 2 cups Millet flour
  3. 1/2 cup Whole wheat flour (for binding)
  4. to taste Salt
  5. 1/2 tsp Jaggery powder
  6. 1 tsp Sesame seeds
  7. 1 cup Hot water
  8. For Zunka
  9. 1 cup Chick pea / bengal gram flour
  10. 1 tsp Mustard seeds
  11. 2 large Chopped onions
  12. 2 Chopped green chillies
  13. 1/2 tsp Ajawain seeds
  14. 1 tsp Chilli powder
  15. 1/2 tsp Turmeric powder
  16. 1/4 tsp Hing
  17. 5 -8 Curry leaves
  18. 1/2 tsp Garam masala powder
  19. 1/2 Chopped tomato optional
  20. 1 tablespoon Cooking oil
  21. 1/4 cup Water
  22. as required Chopped green coriander leaves to garnish
  23. 1 tablespoon Ghee for applying on bhakris

Steps to make to make Maharashtrian Lunch Zunka Bhakri

  1. First combine all the ingredients for Bhakri in a plate or bowl and using hot water,mix to a smooth but firm dough. Cover with a wet cloth.
  2. Heat oil in a kadhai. Pop mustard seeds. Then add hing, curry leaves and saute well.
  3. Then saute onions, chillies till they are aromatic. Then add tomatoes, add all the masala, salt and saute well.
  4. Now mix water, salt, ajawain seeds in the besan and mix well. Add this to the cooked tempering and keep stir cooking till the zunka is aromatic, and onions are fully cooked. Add 1TSP oil and mix for more taste.
  5. Cook on low flame for 5minutes. Then switch off and keep covered for 10 minutes.
  6. To make Bhakri, heat a skillet. Roll out lemon sized balls of dough on a working platform or wooden board. Use generous amount of dry flour. Roll into a thick disc.
  7. Alternatively, you can press and roll between your palms and make the Bhakri which needs a lot of practice. So best is to roll out.
  8. Now gently place the disc on Tawa or skillet. Smooth the top with water. Roast on low or medium flame from both the sides.
  9. Remove when brown spots appear and apply some ghee all over for softness. Keep covered in a cloth bread basket.
  10. Serve delicious Zunka and Bhakri with onions, green chili chutney called Thecha in Marathi. Enjoy with buttermilk or kadhi, pickle and some jaggery topped with ghee. Yummy to the last bite!
