  1. Boil some hot water. In a bowl take the Makai Ka atta and add salt and Ajwain and mix. After that add 1 & 1/4 cup boiling hot water to the atta and mix it with a wooden spatula or anything you have. Cover and keep it like that for at least 15-20 minutes. I prefer covering it with the wooden rolling board.
  2. After that knead it into a smooth dough. If it's still dry add hot water. I didn't require any. Cover and let it rest for 20 -30 minutes.
  3. Heat the tawa. Divide the dough into 5 parts and form balls, apply ghee on the parchment paper and place the Makai dough balls on it and with the help of your fingers flatten it. Lift the roti along with the parchment paper and place it upside down on the hot tawa.
  4. Peel off the paper. Let it roast and firm up a bit on one side, then flip on the other side. Then apply ghee and fry / cook like you would do to cook a paratha by flipping and pressing with your flat spatula. Reuse the parchment to make rest of the roti...I made all five Rotis in the same parchment paper, applying ghee everytime on it before flatting the dough balls. Serve hot with Sarso Da Saag or Palak Paneer or anything you would love to have it with. I had it with Sarso da saag.
